Oh my gosh ya’ll…I have found a super tasty kale salad.
I have tried kale before and absolutely hated it. Yuck!
I thought it tasted like a dirt fart. (That was pretty descriptive …sorry.)
I am not one to dismiss a food based on my first impression though.
I am well aware that it could be an operator error and I may not exactly know how to prepare the new dish or use a new ingredient. I am also aware of the fact that just because I follow a recipe to a T … it still may not be the delicious gourmet dish that someone else was able to prepare.
So, I will usually give a dish or ingredient at least 2 tries, maybe even 3 if it’s lucky.
That was the case with kale.
My first experience was an experiment (Imagine that…I’m notorious for my food experiments) … homemade kale chips. They looked great on Pinterest. They seemed easy enough to make.
But boy did those suckers truly suck!
Then I found a recipe over at Moms Can Be Fit that has definitely help changed my opinion of kale. Tiffanie has an OMG delicious homemade vinaigrette type dressing that makes a kale salad taste so yummy you’ll wanna slap your momma. (My southern is coming out in that one. I apologize. )

She uses the dressing to make a broccoli asian slaw, but I haven’t tried that yet. I bet it is just as good as this kale version.
I chose to use this pre-packaged Sweet Kale salad kit that I found at Walmart. It has red cabbage, brussels sprouts, kale, and chicory. It also comes with some toppings (dried cranberries, pumpkin seeds and a dressing). I just toss those out. The bag says gluten-free but I didn’t want to take any chances with sneaky ingredients in the extras.
My mouth is watering just sitting here writing this for you. YUMMMM
For the dressing…
1/4 cup olive or avocado oil
1 TBSP red wine vinegar
1/2 tsp soy sauce (or Coconut aminos if you are avoiding soy)
Pour all ingredients in a bowl and mix. A little magic is going to happen right before your eyes.
Now toss in a couple hands full of the Sweet Kale salad mix.
Also toast and add…
1/8 cup sliced almonds
1 TBSP sesame seeds
Gently fold the salad greens into the dressing. Make sure it’s thoroughly coated. You don’t want a single bite without this yumminess on your trip to Flavortown.
You can dig in and enjoy at this point OR …
Add some grilled chicken or thinly cut steak.
I have done both and let me just tell you…that sh*t was tasty!!
This is a great light lunch or dinner. Plus, it is super healthy for you. Like I said earlier … it is gluten free. If you use the coconut aminos, it is also soy free.
I have been telling everyone I know about this amazing recipe. I’m sure the girls I work with really wish I would shut up already. LOL
